Tzatziki

Greek food is fabulous.  I love it.

Make this in a food processor for a dipping sauce, or leave the cucumbers diced.  I like to eat mine with a fork, but it’s completely personal preference.

Top grilled chicken and veggies, wrapped in a pita, with tzatziki, or serve on fish or with fish.

The flavors are fresh, cool and absolutely addictive.

 

Tzatziki

Fresh, cool and delicious, tzatziki is a great Greek summer side.

  • Prep Time : 20 minutes
  • Cook Time : 5 minutes
  • Yield : 1 1/2 cups

Peel and dice the cucumber.  Place in a colander and salt; drain in the sink for about 15 - 20 minutes.

Zest a lemon and place the zest in a medium-sized bowl.  Squeeze the lemon juice into the bowl.  Add the finely minced garlic.

Add the cucumber and 3/4 cup of plain Greek yogurt.  Stir and add fresh cracked pepper, and finely chopped fresh dill.  Taste and tweak.

Let the flavors blend for about an hour before serving.

Alternatively, mix ingredients in the bowl of a food processor and pulse for a smooth, cool dipping sauce.
