Time change is coming next weekend! Hopefully, better weather is close behind! I love the seasons, really I do . . .but March is such a tease!!! Come on!
Joss T and I are so looking forward to getting outside for walks, playing and cooking! The rain is pelting down on the tin roof as I type, and I can imagine it freezing as it hits and turning the whole mountain into a giant slalom. In the meantime, I’m thinking about spring, Easter and sunshine!!!
As with many families, our special occasions focus on food, heaping plates of deliciousness that we all enjoy together. Traditionally, we have ham at Easter with pickled beets and eggs, scalloped potatoes, veggies, homemade rolls and a giant peanut butter bunny cookie (with homemade peanut butter fluff icing)! I’ll be posting all of these recipes on the Four Mile Ridge blog, so you can try them out before the holiday! I found a great mustard/maple syrup recipe for an overnight ham marinade that is awesome, especially if I smoke the ham! I can’t wait to share it! Cheesy scalloped potatoes with or without bacon are always good with any pork dish and I love serving fresh Brussels sprouts as the perfect complement. They are delicious in a maple syrup and balsamic vinegar reduction with dried cranberries and sliced almonds.
Since our road is sketchy during the winter months, springtime means family and friends randomly stopping by (check out Pappy going Mach I on the slide), cleaning up the screen porch for relaxation, more Ranger rides (we will be searching the mountainside for antler sheds soon) and, our favorite, camp fires!
