Malibu Chicken

Almost all of the recipes I post are ones I have used for years, but this is a newby, and one I absolutely love.  It’s a little summery, a little different and completely delicious.

This recipe doesn’t take long at all and can be completely ready for dinner in under 30 minutes, and makes chicken a lot less boring!

Serve with sweet potato fries, fresh and fruity salad and a frozen pina colada.

Malibu Chicken

A perfect combination of flavors, my family loved this Malibu Chicken recipe.  From marinade to table ~ a 30 minute winner for dinner!  Tastes like summer - and chicken!  🙂

  • Prep Time : 10 minutes
  • Cook Time : 20 minutes
  • Yield : for a family



Clean and split the chicken breasts if necessary.  Pound to about 1/2 inch thickness with the flat side of a meat tenderizer, covered with plastic wrap or in a ziploc bag.  Mix the wine and EVOO in a plastic bowl with a lid and put the chicken in to marinate.

Make the sauce by combining all of the sauce ingredients and whisking.  Taste and add more honey, salt and pepper.

Preheat the grill and clean the grates ( or heat up a large cast iron skillet).  While the grill is preheating, core and slice up the pineapple into 1/2 inch slices.

Remove the chicken from the marinade and drain, briefly, on paper towels, then put the chicken on the grill.  Season with the Kick'n Chicken Seasoning and cook until the chicken releases from the grill.  Rearrange to assure even cooking.  Place the ham on the grill in 6 evenly distributed stacks to heat up on the grill.  Also put the pineapple on the grill to get grill marks.

Turn the chicken and finish cooking, top with the ham, pineapple and cheese.  Close the grill lid to melt the cheese and drizzle with the sauce.
