Who needs Little Debbie? These Homemade Oatmeal Creme Pies taste exactly like Little Debbie’s and as an added bonus, there’s no annoying rattly wrapper to give you away. Actually, there’s no evidence. At all. See, I had half of one for breakfast and no one but my sister knows. And that’s only because I told her. Ha.

- butter - 1 cup (2 sticks)
- dark brown sugar - 3/4 cup
- sugar - 1/2 cup
- molasses - 1 Tbsp
- eggs - 2
- all-purpose flour - 1 1/2 cups
- salt - 1/2 tsp
- cinnamon - 1 tsp
- quick oats - 1 1/2 cups
- Creme Filling
- very hot water - 2 tsp
- salt - 1/4 tsp
- marshmallow creme - 1 - 7 oz jar
- shortening - 1/2 cup
- powdered sugar - 1/3 cup
- vanilla - 1/2 tsp
Preheat oven to 350 degrees F and line cookie sheets with parchment paper.
Cream the butter and sugars, add the molasses, vanilla and eggs, mix well.
Mix the dry ingredients in a small bowl and add to the wet mixture. Mix in the oats.
Scoop using a medium-sized scoop onto the parchment paper. Put no more than 6 cookies on a sheet - they really spread.
Bake 10 - 12 minutes, until they are browned around the edges. Leave the cookies on the sheet to cool. They will continue cooking and begin to set up. They are very soft, so move them to a cooling rack very gently.
While the cookies are baking, in a small bowl, dissolve the salt in the hot water. Cool to room temperature.
In the mixer bowl combine the marshmallow creme, shortening, powdered sugar and vanilla on high until light and fluffy. Add the salt water mixture to the fluff and beat well. Spread the filling on the flat side and top with another cookie.
