Four Mile Ridge Weekend Food Forecast, Week 5

Santa has come and gone and this vacay feels absolutely amazing.


The days leading up to Christmas vacation were nuts.  I’m talking baking, cleaning, wrapping, running and nonstop work.  Why work?  No Snowdays . . .as a matter of fact, it’s been downright balmy on Four Mile Ridge.

The weather?  It’s making me wonder why we winterized the camper!  Playground, walks in short sleeves?  Panting dogs and confused flowers?

I swing back and forth between a feeling of excitement over the possibility of a long summer and the dread of working months and months with little hope of an unexpected day off.

The sisters and I are already making summer plans:  the beach again?  the Great Smoky Mountains?  a cruise? camping!  I love summer.  I love snow days.  I’m a person divided.

Maybe I’m counting my chickens before they . . . freeze?  Maybe I should knock on wood?  Maybe there’s a blizzard out there, lurking in the forecast as I type.

I’ve been trying out my new 35 mm lens that Santa brought.



Photography, my new hobby (as if I really needed another???) is frustrating and fun.  I love having this time off to tinker, for sure.

So, what to cook in winter that feels like summer?


Brussels sprouts (linked) and cheeseburgers on the grill!


Beer-battered fish and chips (linked) and Cajun Shrimp and Pasta in Parmesan Cream Sauce (linked) for dinner.


I’ll also be making these awesome Sausage-Stuffed Mushrooms (linked), a local favorite, for a little get-together tomorrow evening.


It’s food for summer, in winter!!!

I’m wearing boots and scarves anyway.
