Best Ever Banana Nut Bread with the Captain’s Caramel Sauce

Banana bread drives me bananas.  I love to eat it, but I have baked so many loaves that are sunken in the middle, undercooked, gooey.  It’s just nuts.  Get it?

Not anymore.  I have found the recipe for banana bread happi-ness (no, it’s not from calling 1-900-happi-ness).  It’s from Sally’s Baking Addiction.  Follow the recipe and find banana bread bliss.  Then add the salted caramel sauce . . . yum.

Best Ever Banana Bread with the Captain's Caramel Sauce

Banana Nut Bread Happi-ness.

 

 

Prep Time : 15 minutes. Cook Time : 45 minutes Yield : 1 large loaf Allergens : ,

Ingredients

Spray one or two 9 x 5 loaf pans and set aside.  Preheat the oven to 350 degrees F.

Cream together the butter and brown sugar on medium speed about 3 minutes.  Add the eggs, mix well after each.  Add the yogurt, mashed bananas and vanilla, beat for 1 minute.

In a separate bowl, whisk together the flour, baking soda, salt and cinnamon.   Using a spoon, mix the dry ingredients into the wet ingredients.  Do not overmix.  Add the chopped pecans; fold them in gently.

For smaller loaves, use two pans or mini-loaf pans.  Watch them carefully because cooking times will vary for smaller portions.

If baking one large loaf, bake for 45 minutes, but cover it loosely with foil at 30 minutes to keep it from browning too much.  Test the bread with a toothpick.  If it comes out clean, it's done.  Serve with caramel sauce.

Captain's Caramel Sauce

Stir the water and sugar together in a large pot or Dutch oven (it's very important to cook this caramel sauce in a large pot because it bubbles up once the cold ingredients are added).  Heat without stirring until the mixture starts turning golden brown throughout.  You may just barely swirl the pan gently.  Stirring causes the caramel to be gritty.  When the sugar mixture turns golden and just begins to smoke, turn the heat down, then add the other ingredients, stirring gently.  The mixture will bubble up.  Be careful!!!  Pour carefully into a mason jar, but do not cover until completely cooled.

The mini-loaves of banana bread make a great gift.  The Captain's Caramel Sauce in a small mason jar makes a great gift (people might want to eat it on ice cream, maybe).
